Get ready for three exciting new venues opening tonight in Miami! Just in time for the holiday weekend, David Grutman of Groot Hospitality is unveiling Winker’s, Toothfairy, and S.F.C (Sushi Fly Chicken) at 1575 Alton Road. It’s a first for Grutman—launching three concepts simultaneously—and he’s thrilled. Let’s take a closer look at what he’s been working on.
You’ve been busy lately! Do you drink coffee?
I’m an espresso guy. Sometimes a single, sometimes a double—depends on the day’s demands.
This is your first time launching three places at once. What can you tell us about them?
I’ve had my eye on this old Firestone tire garage on Alton Road for a while. I thought, why not do something different? So we transformed it into three distinct restaurants under one roof. Toothfairy is our bakery and ice cream shop, nostalgic yet made for Instagram. Winker’s is my modern spin on the classic diner. And Sushi Fly Chicken is a hybrid takeout spot and lounge, inspired by Tokyo’s underground with a Miami edge.
Winker’s is named after a cat. Still an animal lover? What’s your spirit animal?
Winker’s is named after our family cat—he’s got one eye and my daughters love him. It adds a personal, family touch. I do love animals, but I’ve never really thought about a spirit animal. Maybe something that’s always on the move.
What inspired the design of each venue?
S.F.C draws from Tokyo’s bar culture, with a 75-foot mural by Miami artist Santlov featuring anime and manga, plus five bold prints by Fin DAC and zig-zag neon lights that feel like a futuristic subway. Winker’s has an Art Deco vibe—starburst and surfboard-tail wall panels, Pullman booths, metal details, and a peninsula bar that mixes retro and modern. Toothfairy is a visual treat with a full ombré paint job that fades from pink to blue.
Where do you go for inspiration?
When I need a reset, I hit the tennis court—daily if I can. I also escape to my villa in Turks & Caicos to recharge.
If you had to pick one treat from Toothfairy, what would it be?
Tough call! Our chef, Dallas Wynne, has twice been named Miami’s best pastry chef. Everything she makes is incredible.
What’s happening with your tennis-inspired brand, Prince?
Lots coming up! We’ve got two big collabs: one with Melissa Wood Health and another with Reebok. The Reebok one is super Miami—bright and bold. I love how both brands bring a fresh take to their tennis roots.
What’s your favorite part of the job?
The people. Whether it’s a first-time guest or a celeb who’s been to LIV a hundred times, I want everyone to have fun. We’re in the business of joy, and seeing people enjoy themselves is everything.
What did you want to be growing up?
I think I was always drawn to hospitality, even if I didn’t know it. I’m glad I didn’t stick with my original post-college plan—insurance. Definitely not for me.
What makes you proud?
My family, my team at Groot Hospitality, and Miami. It’s the best city in the world.
