Big things are happening in Miami tonight as David Grutman of Groot Hospitality launches three brand-new venues at 1575 Alton Road: Winker’s, Toothfairy, and S.F.C (Sushi Fly Chicken). This trio of openings marks a bold new chapter for Grutman’s ever-evolving empire.
Toothfairy brings a playful mix of bakery and ice cream shop, blending retro charm with social media-ready aesthetics. Winker’s reimagines the classic diner with a modern flair, named after Grutman’s one-eyed cat. Meanwhile, S.F.C fuses takeout with a lounge and bar, channeling Tokyo’s underground energy through a Miami lens.
Each venue offers a distinct vibe. S.F.C dazzles with a 75-foot mural by local artist Santlov, bold artwork, and glowing neon. Winker’s leans into Art Deco with vintage leather seating, metallic details, and an airy layout. Toothfairy pops with a pink-to-blue ombré palette, perfect for snapping pics.
When seeking inspiration, Grutman turns to tennis or escapes to his Turks & Caicos villa. He’s especially proud of Toothfairy’s chef, Dallas Wynne, twice named Miami’s top pastry chef, and admits he can’t choose a favorite treat from the menu.
Looking ahead, Grutman teases fresh collaborations for his tennis-inspired brand, Prince, including projects with Melissa Wood Health and Reebok.
For Grutman, it’s all about the people—whether it’s a celebrity or a first-time guest, he’s driven by creating unforgettable experiences. Reflecting on his journey from a potential insurance career to hospitality stardom, he feels grateful to have found his true calling.
With pride in his family, his team, and his city, Grutman hints at taking his vision global. More exciting ventures are just around the corner.
